I am thankful for sweet potatoes. They’re loaded with vitamins, they can be prepared sweet or savory (I prefer the latter), and they’re a fantastic orange color. To be fair, I think officially these are a kind of yam since something I read once said that sweet potatoes actually have white flesh. However, most of the US considers “orange inside” to equal sweet potato.
What’s your favorite thing to do with this veggie? I made sweet potato quesadilla filling tonight so that it would be ready for easy lunch tomorrow.
Oh, and I shredded 12 cups of sweet potatoes by hand. All because I didn’t want to wash the food processor. In case you’re wondering, this is a good thing to do if you want to tone your upper arms. Mine weren’t thrilled with that aspect of the task.
